Lazy Gefilte Fish
Origin of the recipe
The classic recipe for gefilte fish—stuffed fish—involves stuffing minced meat patties with skin removed from carp or pike, and then boiling the dish. But "lazy" gefilte fish—fish patties boiled with beets and carrots, infused with their flavor—has gradually become increasingly popular.

Step-by-step recipe
Step 1:
Mince the carp fillet. Coarsely chop two onions and mince them as well.
Step 2:
Fry the coarsely chopped and layered onion in a frying pan and mince.
Step 3:
Soak 200 grams of breadcrumbs in a bowl, squeeze them out, tear them into pieces, and add to the minced meat. Season with salt and pepper to taste.
Step 4:
Knead the mixture with your hands.
Step 5:
Break and add 4 eggs, knead again.
Step 6:
Peel and slice 4 carrots into diagonal wedges. Boil and slice 3 beets into rounds.
Step 7:
Place the peels of 4 onions on the bottom of the cauldron, and then place a layer of beets on top.
Step 8:
Form the minced meat into oblong patties and place them on top of the beets.
Step 9:
Place a piece of carrot on each cutlet and a few pieces around it. Add another layer of beets, another layer of fish cutlets, and a layer of carrots.
Step 10:
Pour water into the cauldron so that it covers all the ingredients, cover with a lid and bring to a boil.
Step 11:
Season with salt and pepper to taste, add a tablespoon of sugar and cook for 40 minutes over medium heat.
Step 12:
Remove the cutlets from the cauldron and serve with carrots and herbs.
Cooking tips
A slightly more complex and more classic version can be achieved by stuffing fish steaks, from which the meat has been removed, with the cutlet mixture and then boiling them with beets and carrots.
Instead of carp, you can use pike fillet.
Before boiling, the cutlets can be lightly fried in a frying pan.
