Step-by-step recipe
Step 1:
Grate the zucchini on a coarse grater, place in a sieve, add salt, mix and let stand for about 20 minutes.
Step 2:
Rinse the zucchini under running water and squeeze thoroughly.
Step 3:
Cut three slices of bread into cubes and grind in a blender.
Step 4:
Cut the onion into pieces and chop it in a blender.
Step 5:
Grate the Parmesan cheese.
Step 6:
Finely chop the green onions and dill.
Step 7:
In a bowl with grated zucchini, add flour, herbs, grated Parmesan, two-thirds of the bread crumbs, onion, and feta.
Step 8:
Beat in an egg and crush a clove of garlic. Mix well. If the dough is too runny, add the remaining crumbs.
Step 9:
Heat vegetable oil in a frying pan, drop tablespoonfuls of dough into the pan and flatten slightly.
Step 10:
Fry the Greek-style zucchini pancakes over low heat on both sides until golden brown.
Cooking tips
If the zucchini is young, there is no need to peel or seed it.
The dough for Greek zucchini pancakes should be quite thick.
