Step-by-step recipe
Step 1:
Wash and grate the zucchini into a bowl, add salt, mix and leave for 10 minutes.
Step 2:
In a clean bowl, grate the hard cheese and a clove of garlic on a fine grater.
Step 3:
Beat two eggs into the cheese, add sour cream or yogurt, spices, salt and dried herbs.
Step 4:
Finely chop and add green onions and whisk well.
Step 5:
Squeeze the zucchini, add the prepared mixture to them and mix well.
Step 6:
Sift flour and baking powder into a bowl with the zucchini mixture and knead the dough.
Step 7:
Heat the waffle iron well and grease it with vegetable oil.
Step 8:
Place the batter on the waffle iron plate and spread it out lightly.
Step 9:
Bake for 4-5 minutes until golden brown, carefully remove and transfer to a plate.
Cooking tips
If the zucchini is young, there is no need to peel them.
Do not open the appliance until the zucchini pancakes in the waffle iron are ready.
Serve zucchini pancakes hot with sour cream, yogurt or cream cheese.
