Step-by-step recipe
Step 1:
Make sure you have all the ingredients. If the shrimp are frozen, peel them and let them defrost completely at room temperature. Peel and finely chop the onion and crush the garlic—it will add a rich flavor to the sauce.
Step 2:
Heat a frying pan and add butter. Add the shrimp and fry for 2–3 minutes until they change color. Season with salt and pepper and transfer to a plate. These seafood are the basis of the entire dish, so don't overcook them.
Step 3:
In the same pan, sauté the onion and garlic until soft. Add the tomato paste and cook for 1 minute. Pour in the cream, bring to a gentle simmer, then reduce the heat. This is the base of the cream sauce.
Step 4:
Add grated Parmesan and stir until thickened—you'll have a creamy, garlicky sauce. Return the shrimp to the pan and cook for 1–2 minutes until the sauce thickens.
Step 5:
Cook the pasta in salted water until tender. Drain in a colander and add to the pan with the sauce and shrimp. Gently toss to ensure each shell absorbs the flavor of the sauce.
Step 6:
Divide the pasta among bowls and sprinkle some more Parmesan cheese on top. This dish is perfect for a quick dinner.
Cooking tips
Use fresh or well-defrosted shrimp—their quality determines the flavor of the entire dish. Don't overcook the shrimp; they should remain juicy. For added flavor, add a pinch of parsley or fresh basil. You can use another hard cheese instead of Parmesan, but Parmesan will bring out the true flavor of pasta with shrimp in a creamy sauce.
