Greek Melomakarona Cookies
Origin of the recipe
Melomakarona are traditional Greek honey cookies, typically baked for Christmas. They can be made with either olive oil or butter and milk. We suggest making a version of these cookies that's suitable for those observing a fast on Christmas Eve and for strict vegetarians who still enjoy honey.

Step-by-step recipe
Step 1:
Place sugar in a bowl, add olive oil, vegetable oil, cognac, ground cinnamon and cloves.
Step 2:
Dissolve baking soda in orange juice and add to a bowl.
Step 3:
Stir with a whisk until the sugar dissolves.
Step 4:
Add baking powder to the flour and gradually, while stirring, sift it into the liquid mixture.
Step 5:
Knead the dough with your hands.
Step 6:
Form the cookies, place on baking paper and bake at 180 degrees for 20-25 minutes.
Step 7:
Pour water into a deep frying pan, add sugar, bring to a boil and cook, stirring, for 3 minutes.
Step 8:
Cool the syrup for 10 minutes, add honey and stir.
Step 9:
Flatten the cookies slightly, hold them in warm syrup for a minute on each side and place them on a wire rack.
Step 10:
Chop the walnuts and sprinkle them over the cookies.
Cooking tips
Stir the flour into the liquid mixture gradually, in portions, to avoid the formation of lumps.
It is better to knead the dough with your hands wearing gloves so that it does not stick to your hands.
If you're making cookies for Christmas or New Year, you can use a large wire mesh maker to press a pattern onto the cookies, making them look like pine cones.
