Why do we rarely bake homemade cookies? Because it seems too complicated, or we don't want to get hooked on flour and sweets. In fact, you can easily make healthy oatmeal cookies with dried fruit, which contain no flour or sugar.
Step-by-step recipe
Step 1:
Place 2 tablespoons of raisins and 4-5 dried apricots in a bowl, pour boiling water over them for 10-15 minutes.
Step 2:
Place 100 grams of rolled oats in a clean bowl, add a pinch of salt, lemon zest (finely peeled with a vegetable peeler), or cinnamon. Stir.
Step 3:
Drain the dried fruit, finely chop the dried apricots, and remove excess moisture from the raisins with paper towels.
Step 4:
Add dried fruit to a bowl of oatmeal.
Step 5:
Separate two egg whites, pour them into a bowl with the remaining ingredients and knead with your hand.
Step 6:
Form thin cookies.
Step 7:
Bake the cookies in a dry frying pan for 3-4 minutes on each side.
Step 8:
Turn off the heat and leave the cookies in the pan, covered, for 5-10 minutes.
Cooking tips
Place the remaining yolks in a jar and cover with cold water – this way they will not lose their properties after several days in the refrigerator.
Don't fry the cookies in a pan, just make sure they dry out.
