Step-by-step recipe
Step 1:
Sift flour into a bowl, add yeast, sugar and salt. Mix.

Pour in warm water and olive oil.

Knead the dough for about 15 minutes until elastic, then divide into two parts - you will get 2 pizzas with a diameter of approximately 30 cm.
Step 4:
Place each piece in a bowl and brush with olive oil. Cover with plastic wrap, prick it with a knife, and let it rest in a warm place for 2 hours.
Step 5:
Finely dice the onion and garlic. Fry them in a pan with olive oil until golden brown.
Step 6:
Pour the cream into the pan, add salt, pepper, and dried herbs. Simmer for 5 minutes over medium heat.
Step 7:
Add grated Parmesan to the sauce and stir until smooth.
Step 8:
Blend the sauce until smooth and silky without lumps.
Step 9:
On a floured surface, gently stretch the dough with your hands to the desired size and shape.

Place on a baking tray sprinkled with semolina.

Spoon the carbonara sauce over the dough, spreading it evenly.

Sprinkle with grated cheese.

Cooking tips
For a more delicate dough, use warm water, but not hot, so as not to kill the yeast.
Before placing the dough on the pan, lightly sprinkle it with semolina to prevent sticking.
To keep bacon crispy, place it on the pizza after applying the sauce.
For added flavor, add freshly ground black pepper to the sauce rather than pre-ground black pepper.
Don't overload the pizza with toppings to ensure it bakes evenly and doesn't become raw in the center.
Before baking, let the dough rise for another 15 minutes to achieve an airy texture.
After baking, let the pizza rest for 5 minutes - this will help it maintain its shape and prevent the toppings from spreading when cutting.
