Step-by-step recipe
Step 1:
Prepare the filling: In a bowl, mix the cottage cheese, egg, salt and finely chopped herbs.
Step 2:
Mix until smooth.
Step 3:
Roll out the dough: Dust your work surface with flour. Roll out the puff pastry into a rectangle about 0.5 cm thick.
Step 4:
Cut the dough into two pieces.
Step 5:
Place the prepared filling in the middle of the dough.
Step 6:
Cover it with the second half of the dough and pinch the edges tightly.
Step 7:
Trim the dough to create a Christmas tree shape. The scraps can also be used to make an appetizer.
Step 8:
Make a pattern: Use a sharp knife to make cuts along the edges of the tree to create branches. Twist them slightly a few times.
Step 9:
Brush and sprinkle: Brush the pie with beaten egg yolk. Sprinkle with sesame seeds.
Step 10:
Bake: Place the pie on a parchment-lined baking sheet. Bake in the oven at 180°C for about 25-30 minutes until golden brown.
Step 11:
Brush the scraps with egg, sprinkle with seeds and bake in the oven.
Step 12:
Garnish: After baking, garnish the pie with cherry tomatoes and herbs.
Cooking tips:
For best texture, use cold puff pastry and do not stretch it too much when rolling it out.
If the filling is too runny, add a little flour or dry cottage cheese to prevent it from leaking out during baking.
Be sure to make small holes in the top layer of dough to allow steam to escape while baking.
Use a sharp knife to cut the dough so that the edges are even and neat.
For a richer flavor, you can add a little cheese or onion to the filling.
Do not open the oven during the first 15 minutes of baking to allow the pie to rise well.
You can decorate the pie with any available ingredients: olives, black olives or nuts.
This pie can be served hot or cold - it is equally delicious either way.
