Zucchini caviar is a flavorful and delicate dish made with fresh vegetables such as zucchini, onions, carrots, and bell peppers. All ingredients are pan-fried with tomato paste and spices, then simmered until tender, creating a rich flavor and mouthwatering texture. Step 1:
Start by thoroughly washing all vegetables to remove any impurities.

Pass the zucchini and onion through a meat grinder, then remove excess moisture using a sieve.
Step 3:
Similarly, grind the bell pepper and carrots.

Combine all chopped vegetables in one bowl, mixing thoroughly.

Add tomato paste, salt and hot pepper to give the mixture a rich flavor.

Place the resulting mixture in a heated frying pan with oil and fry over high heat for about 10 minutes, until excess moisture evaporates.

Then, reduce the heat to low, cover the pan with a lid and simmer the caviar for another 12-15 minutes until done.
Step 8:
If you plan to preserve squash caviar for the winter, add a little vinegar, place the hot caviar in sterilized jars and seal with lids.
