Step-by-step recipe
Step 1:
Peel the carrots, cut them in half crosswise, each half lengthwise, cut into strips and place in a bowl.
Step 2:
Crush and chop 3 cloves of garlic with a knife, add to the carrots.
Step 3:
Add salt, oregano, thyme and pepper.
Step 4:
Finely grate the Parmesan and add to the bowl. Stir.
Step 5:
Add olive oil and stir.
Step 6:
Line a baking sheet with parchment paper and spread the carrots out in an even layer.
Step 7:
Sprinkle the carrots with breadcrumbs.
Step 8:
Bake for 15-20 minutes at 180 degrees.
Step 9:
Place on a plate and serve with vegan mayonnaise.
Cooking tips
Instead of Parmesan, you can use any inexpensive semi-hard cheese, for example, Russian.
You can use any dried herbs, including dried basil and parsley.
Carrots prepared in this way can be eaten as an appetizer or a side dish to other dishes, such as rice or vegetarian cutlets.
Vegan mayonnaise can be made from 30 ml of chickpea water, 120 ml of olive oil, and a teaspoon of lemon juice, blended with an immersion blender and refrigerated. However, store-bought vegan mayonnaise can also be used.
