Hake with vegetables in sour cream
Origin of the recipe
Fish in a vegetable marinade is a favorite recipe among Soviet housewives and caterers. It has nothing to do with marinating per se, but the result is a flavorful dish that simply melts in your mouth. The fish marinade always includes carrots and onions, and sometimes tomatoes. Fish marinated with sour cream is a compromise between Jewish and Russian cuisines: while the former favored red marinades, the latter favored white ones.

Step-by-step recipe
Step 1:
Cut off the head and clean the fish.
Step 2:
Cut the fish into pieces of any size, do not cut into small pieces.
Step 3:
Place the fish in a bowl, season with salt and pepper.
Step 4:
Add paprika, dried garlic, sour cream and mustard.
Step 5:
Cut the onion into half rings and add to the fish.
Step 6:
Peel and cut the carrots into rings and add to the fish.
Step 7:
Pour vegetable oil into a bowl with fish and vegetables.
Step 8:
Mix the vegetables, cover and leave to marinate for 20 minutes.
Step 9:
Place the fish with the marinade in a baking dish and smooth it out.
Step 10:
Cover the pan with foil and use a knife to make several small holes in the foil.
Step 11:
Bake in the oven for 30 minutes covered with foil and 30 minutes without foil.
Cooking tips
Instead of hake, you can use any fish without a strong smell and not bony (pollock, tilapia, pike perch, etc.)
It's best to leave the fish to marinate in the refrigerator overnight, so it will soak up the flavor and become more delicious.
When baking, you can reduce or increase the cooking time if necessary, but do not let the vegetables dry out too much.
