Step-by-step recipe
Step 1:
Cut one apple into slices and grate the second one on a coarse grater.
Step 2:
Combine eggs, salt and sugar in a bowl and mix with a mixer without beating.
Step 3:
Add lemon zest and a little vanilla or vanilla sugar.
Step 4:
Add milk, flour, vegetable oil, and baking powder. Mix with a mixer until smooth.
Step 5:
Add grated apple and stir.
Step 6:
Heat ghee or a mixture of vegetable oil and butter in a frying pan.
Step 7:
Fan out the apple slices and lightly fry over medium heat on both sides until golden brown.
Step 8:
Reduce heat to low and pour batter over apples.
Step 9:
Cook, covered, for about 10 minutes, until the top is dry.
Step 10:
Grease a plate with vegetable oil, carefully separate the edges of the charlotte from the side with a spatula and turn the pie over onto a plate.
Step 11:
Add a little ghee or vegetable oil to the pan and return the pie to the pan with the apples facing up and cook without a lid for 2-2.5 minutes.
Step 12:
Place the pie on a plate, lightly dust with powdered sugar or spread with a thin layer of jam.
Cooking tips
Instead of a mixer, you can use a regular whisk.
You can add just lemon zest or just vanilla to taste.
Milk can be replaced with kefir or liquid yogurt.
If you fry the charlotte only in butter, it will burn.
