Origin of the recipe
The origins of the charlotte in cooking are shrouded in mystery. Most legends link it to the name Charlotte (the unrequited love of the chef-inventor, as well as the English Queen Charlotte, wife of George III, who is also credited with its invention). An equally plausible theory is that the name derives from the English dish "Charlyt," made of beaten eggs, sugar, and milk. An early version of the charlotte is known—a casserole of layers of white bread slices and apples soaked in sweet milk. However, the modern recipe is more like an apple sponge cake—easy to make, aromatic, and delicious.

Step-by-step recipe
Step 1:
Sift flour into a bowl, add a pinch of salt and baking powder, mix well.
Step 2:
Grate 100 grams of butter from the refrigerator into the flour while it is still solid.
Step 3:
Mix well.
Step 4:
Beat the eggs in a bowl with a mixer, gradually adding sugar until fluffy.
Step 5:
Pour in the flour mixture.
Step 6:
Mix with a mixer until smooth.
Step 7:
Peel the apples and slice them thinly and finely.
Step 8:
Mix apples and dough.
Step 9:
Grease the pan and line the bottom of the pan with butter.
Step 10:
Place the dough into the pan and smooth it out.
Step 11:
Bake for 30-35 minutes at 180 degrees.
Cooking tips
The quality of the charlotte depends on how long you beat the eggs. Generally, for a high-quality batter, beat the eggs and sugar for at least five minutes, and preferably seven.
If you use your own home-grown apples, you don’t need to peel them.
The finished pie can be decorated with powdered sugar, using a sieve when sprinkling to ensure an even coating.
