Step-by-step recipe
Step 1:
Sift the flour.
Step 2:
Pour the eggs into a bowl, add salt and beat with a mixer until fluffy.
Step 3:
Continuing to beat at high speed, add sugar in three additions.
Step 4:
Add flour in three stages, carefully mixing with a spatula using bottom-up movements.
Step 5:
Pour some batter into a parchment-lined pan and spread it out with a spatula.
Step 6:
Sprinkle with some raspberries, cover with a layer of dough, smooth it out, add some more raspberries and the rest of the dough.
Step 7:
Place the last portion of raspberries, pressing the berries down slightly.
Step 8:
Bake at 180 degrees on the second level from the bottom for 50 minutes.
Step 9:
Let the charlotte cool for half an hour and remove from the pan by running a knife along the edge.
Cooking tips
Use eggs at room temperature.
Preheat the oven.
Start beating the eggs at low speed until smooth, then increase the speed.
Mix the dough gently but thoroughly so that it does not fall and is homogeneous.
