Cooking tips
For the best flavor, use high-quality sour cream and don't skimp on it—each layer should be well-greased, which will ensure the tenderness and juiciness of the entire dish.
Add a little mustard or lemon juice. This will enhance the flavor of the herring and vegetables, compensating for the lack of mayonnaise and adding a slight tang.
Squeeze the grated vegetables thoroughly, especially the beets and potatoes—excess moisture can make the salad watery, as without mayonnaise, there's no fatty base to hold it together.
Use lightly salted herring. Overly salted fish without rich mayonnaise will have a harsh taste. If necessary, soak the fillets in milk or water for 15–20 minutes.
If you don't have a ring, you can use any round mold, and just turn the salad out onto a plate before serving.
Don't forget to clean all the produce and prepare the ingredients before you start cooking - this will significantly speed up the process of assembling the layers.
This layered salad is perfect for any holiday or just a family dinner.
Let the salad sit for a bit. Even without mayonnaise, 1–2 hours in the refrigerator will help the layers set and the flavors meld.
