Homemade cotton candy "Talkysh Kaleve" is prepared differently from its European counterpart, more like long noodles. The secret is that the strands of hot caramel are coated with a warm, toasted mixture of flour and melted butter during the pulling process, preventing them from sticking together. Preparing this delicacy is challenging and a bit like a magic trick, but the fluffy mixture produces delicate and delicious treats. Make talkysh kaleve at home and enjoy this traditional Tatar dessert, which will delight your loved ones with its delicate flavor and crispy texture!

Step-by-step recipe

Step 1:

Combine the ghee and flour in a frying pan and fry, stirring constantly, for 15-20 minutes over low heat, until the oil appears on the surface in an even layer and the mixture begins to resemble liquid clay.

Step 2:

Combine sugar, honey, and water in a saucepan. Cook for 5-6 minutes, stirring constantly.

Step 3:

Pour the boiling liquid caramel onto a silicone mat.

Step 4:

Using rubber gloves, constantly move the caramel around the middle of the mat, preventing it from hardening into a flat cake.

Step 5:

When the mass becomes thicker, take it in your hands and quickly stretch it, fold it in half and stretch it again until it turns white and becomes shiny.

Step 6:

Tie the caramel into a ring, place the warm alba on top, and stretch it. Fold it in half to form a figure eight, and stretch it again. The mass should form a bundle of thin white fibers.

Step 7:

Shaggy the fibers, fill a glass halfway with them, compact them, making a depression, put the crushed nuts in it, put another layer of “cotton wool” and compact it.

Step 8:

Shake the formed candy out onto the table. Repeat with the remaining mixture.

Step 9:

Place the finished candies in a container with a lid and put them in the refrigerator.

Cooking tips

Gloves for working with hot caramel should be thick, household gloves, otherwise you can burn your hands.

All operations must be performed very quickly, otherwise the caramel will harden and become brittle. Apply sufficient force when working.
