Origin of the recipe
Plum pudding, or plum pudding, is a must-have on the Christmas table for every Englishman or lover of English traditions. These days, it doesn't necessarily contain prunes, as a variety of other dried fruits have become available. This delicate, dark-colored dessert with a whole bouquet of spices is often doused with brandy and set on fire before serving.

Make classic English plum pudding for the perfect rich, flavourful Christmas treat.
Step-by-step recipe
Step 1:
Place white raisins, chopped prunes, black raisins, blackberries, dates and brown sugar in a bowl.
Step 2:
Stir, add dark rum and beer, stir again and leave to infuse for 24 hours.
Step 3:
Add fine bread crumbs, almond flour, all-purpose flour and mix.
Step 4:
Add candied cherries, spice mix, ground cinnamon, nutmeg, and 3 lightly beaten eggs. Stir.
Step 5:
Add grated butter, stir, cover and leave for 24 hours.
Step 6:
Grease a bowl with oil, place a circle of paper on the bottom and grease it with oil.
Step 7:
Place the mixture in a bowl and smooth the top.
Step 8:
Cover the bowl with paper and foil, tie tightly with kitchen twine and trim off any excess edges.
Step 9:
Place a trivet or small metal cup in the pan, add water, and place the bowl on the trivet.
Step 10:
Cover the pan with a lid, bring to a boil, reduce heat and simmer for 6 hours.
Step 11:
Turn off the heat and remove the bowl when it has cooled enough.
Step 12:
Cut the string, remove the foil and paper, and invert the pudding onto a serving plate.
Step 13:
Garnish the pudding with candied cherries and serve.
Cooking tips
Prepare the spice mixture in the specified proportions, use 2.5 teaspoons of the mixture for the pudding.
Add hot water as it boils away, keeping the water level just below halfway up the bowl of pudding.
