Origin of the recipe
In English cuisine, flan refers to both an open-faced pie like a quiche and a soft caramel pudding made with eggs and milk. In Spain and Portugal, this is the meaning that has taken hold. This delicacy should have a delicate texture and a slight jiggle. Create a dessert in which even the caramel is infused with the aroma of coffee.

Step-by-step recipe
Step 1:
Pour four tablespoons of water into a saucepan, add a teaspoon of instant coffee and stir with a spatula.
Step 2:
Add 100 g of sugar, put on medium heat and cook, stirring.
Step 3:
Bring to a boil and cook for another 3 minutes.
Step 4:
Pour the caramel into the bottom of the pan.
Step 5:
In a bowl, mix a tablespoon of instant coffee with a teaspoon of warm water.
Step 6:
Add two eggs and two egg yolks, whisking.
Step 7:
Add 50 g of sugar and pour in milk and mix well with a whisk.
Step 8:
Add vanilla extract and stir.
Step 9:
Pour the mixture into the caramel mold.
Step 10:
Place the pan in a larger baking dish, cover with foil and pour boiling water into the larger dish to a quarter of its height.
Step 11:
Preheat oven to 160 degrees and bake for 1 hour.
Step 12:
Let the flan cool at room temperature and refrigerate overnight.
Step 13:
Turn the dessert out onto a plate, remove the mold and serve.
Cooking tips
Stir the caramel constantly to prevent it from burning.
Stir the eggs and yolks into the coffee-milk mixture one at a time.
