Indian sweet - Jalebi
Origin of the recipe
Jalebi—pretzels made from deep-fried dough—is a popular street food in India and the Middle East, where this dessert originated and is known as "zalabiya." On Indian streets, jalebi is cooked in huge cauldrons of heated oil. A fresh batch is ready almost instantly, but preparing it at home doesn't take much time and is just as satisfying as the traditional "khvorost."

Jalebi are crispy, sweet, and flavorful spirals popular in India, Pakistan, and other South Asian countries. Jalebi are made with simple ingredients: flour, kefir, water, sugar, and baking powder.
Step-by-step recipe
Step 1:
Pour 300 ml of water and kefir into a bowl.
Step 2:
Add salt, flour, and baking powder to a bowl.
Step 3:
Mix the dough with a whisk or mixer.
Step 4:
Pour the batter into a pastry bag.
Step 5:
Pour a large amount of vegetable oil into a frying pan.
Step 6:
Using a pastry bag, pipe the dough into spiral shapes through a small corner.
Step 7:
Fry over medium heat for 3-4 minutes, turning over to ensure they are completely golden brown.
Step 8:
Pour 300 ml of water into a saucepan and add 400 grams of sugar.
Step 9:
Add citric acid to the pan, stir and bring to a boil.
Step 10:
Cook for 5-7 minutes, stirring occasionally.
Step 11:
Dip the dough spirals completely into the sugar water and remove with tongs to another plate.
Step 12:
Gradually dip all the spirals into sugar water.
Step 13:
Sprinkle with chopped nuts if desired.
Cooking tips
Instead of citric acid, you can add lemon juice, but you will need more of it, about 2-3 tablespoons.
When dipping the spirals in sugar water, do not keep them there for too long, otherwise they will become soggy and may easily fall apart.
