The Spanish omelette, or Spanish tortilla, is a traditional dish of Spanish cuisine. It is a close relative of the Italian frittata. The main characteristic of both dishes is that, in addition to eggs, they also include potatoes and onions. Originally, this omelette was the food of poor peasants and soldiers, and the classic omelette made with beaten eggs is called "French" in Spain.

Step-by-step recipe
Step 1:
Cut the onion into half rings.
Step 2:
Pour olive oil into a frying pan, add the onion and fry over low heat.
Step 3:
Peel and cut 5 small potatoes into half-slices, pour into a frying pan and fry for 10-15 minutes over medium to high heat.
Step 4:
Break 6 eggs into a bowl.
Step 5:
Transfer the potatoes from the pan to the bowl with the eggs and mix well.
Step 6:
Cover the bowl with a plate and leave for 15 minutes.
Step 7:
Pour olive oil into the frying pan, mix the potatoes with the eggs again, put the mixture into the frying pan and fry over high heat for about a minute.
Step 8:
Reduce heat and cook for another 2-3 minutes.
Step 9:
Cover the pan with a plate, flip the omelette over, return it to the pan and cook for another 2-3 minutes.
Step 10:
Place the omelette on a plate and serve.
