Tofu is a soy "cheese" that's an excellent source of protein for vegetarians who don't eat eggs or dairy. While tasteless on its own, it readily absorbs any flavor. Try a tofu "omelet" with vegan cheeses made with plant-based milk—it's a great option for a filling breakfast!
Step-by-step recipe
Step 1:
Wrap a 300g tofu block in a clean napkin and squeeze out excess water.
Step 2:
Place the tofu in a bowl and mash with a fork.
Step 3:
Chop a feather of green onion.
Step 4:
Cut half a medium carrot into small cubes.
Step 5:
Add chickpea flour, 2 tablespoons of nutritional yeast, salt, pepper, carrots and green onions to the tofu.
Step 6:
Pour in plant milk and mix well.
Step 7:
Grease a rectangular omelette pan with vegetable oil, add the mixture and fry over medium heat.
Step 8:
Top one half of the casserole with shredded vegan mozzarella and two slices of vegan cheddar for toast.
Step 9:
Make a groove in the center of the casserole with a spatula and fold it in half, covering the filling.
Step 10:
Fry until golden brown and crispy and cheese is melted.
Cooking tips
Vegan cheeses can be ordered online. If you consume dairy products, you can use regular cheese made with bacterial culture.
Instead of a special omelette pan, you can use a rectangular baking dish, but be careful not to burn the casserole.
