Step-by-step recipe
Step 1:
Place 2-3 tablespoons of Greek yogurt in a bowl. Add a pinch of salt and freshly ground black pepper.
Step 2:
Place half a teaspoon of mustard in a bowl.
Step 3:
Pour in some lemon juice.
Step 4:
Add honey.
Step 5:
Whisk all ingredients thoroughly with a spoon until smooth. Pour the prepared dressing into the salad bowl with the prepared ingredients and toss to combine.
Cooking tips
For a richer flavor, use low-fat yogurt without additives or sweeteners.
If you don't like the sweet taste, reduce the amount of honey.
To make the dressing even more flavorful, add a pinch of dried garlic or herbs.
Don't mix the dressing into the salad in advance—it's better to do this just before serving to keep the vegetables crisp.
For best consistency, use room temperature yogurt—it mixes more easily with other ingredients.
If you are making Olivier with chicken, make sure the meat is completely cool, otherwise it may “cook” the yogurt.
This dietary dressing can be used not only for Olivier salad, but also for other salads - it is universal.
Store the prepared dressing in the refrigerator in a sealed container for up to 2 days – it’s perfect for a quick lunch.
