Step-by-step recipe
Step 1:
Pour soy sauce into the wok.
Step 2:
Add cornstarch to the soy sauce and whisk until completely dissolved.
Step 3:
Finely chop the garlic and ginger and add to the wok.
Step 4:
Finely chop the chili.
Step 5:
Add chili and sugar to the wok and stir.
Step 6:
Place the wok on the stove and, stirring constantly, bring the sauce to a boil.
Step 7:
After boiling, cook for another 2 minutes, pour the sauce into a container and let cool.
Cooking tips
Using a wok isn't necessary, but the cooking time is calculated for a wok, and it heats more evenly than a frying pan, so stirring less frequently is necessary. If you use a frying pan, you'll need to stir constantly.
The thickness of the sauce depends on the amount of starch. If you want the sauce thicker, add more starch. But be careful, otherwise the sauce will become too thick and change the flavor.
