Dessert Modak
Origin of the recipe
Modaks, like laddus, are considered a delicacy in India, especially favored by Ganesha, the god of prosperity and good fortune, and are therefore often prepared during festivals dedicated to this deity—though they are also prepared at any other time. Modaks look similar to khinkali, but they are a sweet dish filled with coconut and ghee.

For the test

Step 1:
Place ghee and coconut flakes in a frying pan and fry for two minutes, stirring.
Step 2:
Add palm sugar and mix well. Fry, stirring, until the sugar melts and combines with the coconut to form a crumbly mass.
Step 3:
Add ground cardamom and stir.
Step 4:
Pour water into a saucepan, add ghee, stir and bring to a boil.
Step 5:
Add rice flour and mix thoroughly.
Step 6:
Cover, turn off heat and let stand for 3 minutes.
Step 7:
Pour the prepared mixture into a bowl and knead the dough.
Step 8:
Form a ball from a piece of dough and flatten it with your fingers to form a thin-walled cup.
Step 9:
Form scalloped folds.
Step 10:
Form a ball of the filling, place it inside the modak, carefully gather the folds at the top, and seal, leaving a sharp end. Form the remaining modaks in the same manner.
Step 11:
Place the modaks in a steamer and cook for 10 minutes.
Cooking tips
Palm sugar can be purchased in online stores.
It is better to knead the dough and make modaks with wet hands.
