Step-by-step recipe
Step 1:
Place the couscous in a bowl, season with salt to taste, add 1 tablespoon of olive oil, pour in boiling water, stir, and let sit for 5 minutes, then stir well again. The couscous should double in size.
Step 2:
In a small bowl, combine the crushed garlic, 1 teaspoon mustard, 1.5 teaspoons sugar, ½ teaspoon salt, ½ teaspoon ground black pepper, the juice of half a lemon, and 3 tablespoons olive oil. Stir. The dressing is ready.
Step 3:
Cut the cucumber into small quarters.
Step 4:
Finely chop the tomatoes.
Step 5:
Finely chop the parsley, cilantro and mint leaves.
Step 6:
In a large bowl, add the cooked couscous, chopped tomatoes, cucumbers, herbs, and dressing. Stir.
Cooking tips
Season the couscous with olive oil or butter, salt, and spices before adding boiling water, and stir. This way, you'll have a perfectly ready-to-eat side dish in just 5 minutes.
Don't leave the steamed couscous in for too long. The grains may stick together, and the dish won't be as crisp. To cook couscous, steep it in boiling water for 5 minutes. Then, stir it with a fork, season with salt and pepper, and season with vegetable oil or butter, if you didn't add them before steaming.
