You can replace wheat flour with almond flour, and sugar with sugar substitutes and sugars found in fruits and vegetables, such as carrots. Try a delicious and healthy carrot cake with nuts and raisins.
Step-by-step recipe
Step 1:
Beat two eggs into a bowl, pour in a teaspoon of vanilla extract, add 50 grams of sweetener and beat the mixture with a mixer.
Step 2:
Add 80 grams of Greek yogurt, 2 tablespoons of applesauce and beat with a mixer.
Step 3:
Grate 60 grams of carrots on a fine grater and add to a bowl.
Step 4:
Add 30 grams of nut crumbs and 20 grams of raisins. Mix with a spatula.
Step 5:
Add 70 grams of almond flour, cinnamon, baking powder, and baking soda. Mix with a spatula.
Step 6:
Grease a springform pan with butter or coconut oil and pour in the prepared mixture.
Step 7:
Bake for 25-30 minutes at 180 degrees, then remove from the oven and cool.
Step 8:
Let's prepare the cream. Place 140 grams of Philadelphia cheese in a bowl, add a teaspoon of vanilla extract and 1-2 tablespoons of sweetener. Stir with a spatula.
Step 9:
Cover the top of the pie with cream and smooth it out with a spatula.
Step 10:
Decorate the edge of the pie with nut crumbs and place a large strawberry in the center.
Cooking tips
You can make your own applesauce or use commercial baby food. Instead of Philadelphia cheese, you can use any other commercially available cream cheese, or even soft processed cheese like Druzhba or Viola.
