Step-by-step recipe
Step 1:
Chop the nuts with a heavy knife and pour into a bowl.
Step 2:
Add dried cranberries and raisins.
Step 3:
Add a cup of oatmeal and stir.
Step 4:
Make applesauce. Cut the peeled apples into quarters and remove the cores.
Step 5:
Place the apples in a tall container, add a tablespoon of lemon juice and puree the contents with an immersion blender.
Step 6:
Add the applesauce to the bowl with the remaining ingredients and stir with a spatula.
Step 7:
Add two tablespoons of olive oil, stir and refrigerate for half an hour.
Step 8:
Line a baking pan with parchment paper.
Step 9:
Form small flat cookies.
Step 10:
Bake for 40 minutes at 160 degrees.
Cooking tips
For the applesauce, use soft apples. The cookies should be small, fitting in the center of your palm, so they bake well without falling apart. These cookies can also be baked in a non-stick pan – they will be moister than those baked in the oven.
