Spitzbuben Christmas Cookies
Origin of the recipe
In southern Germany and Switzerland, a special double cookie made of shortcrust pastry with a jam filling is baked for Christmas—the so-called Linzer cookies, also known as Spitzbuben, or "mischievous little ones." Sometimes the top cookie is cut out to form two eyes and a laughing mouth, while other times it's simply a star.

Prepare aromatic German Spitzbuben cookies with a soft dough and sweet filling – the perfect dessert to get you into the Christmas spirit!
Step-by-step recipe
Step 1:
Place flour, butter cut into pieces, sugar, vanilla sugar, almond flour, eggs in a bowl and mix with a mixer.
Step 2:
Knead the dough in a bowl with your hand, roll it into a ball and put it in a sealed bag in the refrigerator for at least 2 hours.
Step 3:
Cut off a piece of dough, sprinkle the surface and the dough with flour and roll out with a rolling pin.
Step 4:
Using cookie cutters, cut the dough into pairs. Use a small template to make a star-shaped hole in one cookie from each pair.
Step 5:
Repeat this with the rest of the dough.
Step 6:
Line a baking sheet with parchment paper and arrange the cake layers. Bake for 15 minutes at 175 degrees Celsius.
Step 7:
Spread jam on the bottom layer and top with a similar layer with a hole. Repeat with all the cookies.
Step 8:
Dust the cookies with powdered sugar and serve.
Cooking tips
Attach the dough hook to the mixer.
You can take one large template or several of different shapes.
Choose seedless raspberry jam for the cookies.
