Step-by-step recipe
Step 1:
Pour kefir into a bowl, add three eggs, mix with a mixer or whisk.
Step 2:
Add coconut flour, psyllium husk, and sweetener. Stir, cover with a towel, and let sit for 10 minutes.
Step 3:
Add soda, stir.
Step 4:
Pour olive oil into a frying pan over high heat and add half a tablespoon at a time.
Step 5:
Fry the pancakes on both sides. Repeat with the next batch.
Step 6:
Serve with sour cream.
Cooking tips
You can use any sweetener powder, such as a mixture of erythritol and stevia, which is twice as sweet as sugar.
Grind psyllium in a coffee grinder.
Shake the pan gently while frying the pancakes to prevent them from sticking.
It is better to turn the pancakes over with two spatulas.
After you turn the pancakes over, fry them until done under the lid - this will make them fluffier.
Place the finished pancakes on paper towels to remove excess oil.
