Fish pie with pink salmon
Origin of the recipe
Fish pies were traditionally popular in Rus' because fish was much cheaper than meat and could always be caught in the nearest river or sea. Surely everyone has heard of fish pies called rasstegai; larger pies were simply called rybniks, but they had a beautiful and intricate appearance – shaped like fish. We suggest you bake a rybnik with pink salmon.

Step-by-step recipe
Step 1:
Pour warm water into a bowl, add salt, beat in an egg and mix with a spatula.
Step 2:
Add sour cream and stir.
Step 3:
Sift flour into a bowl, mix and knead the dough.
Step 4:
Grease the dough with vegetable oil, cover and leave for an hour and a half.
Step 5:
Cut the onion into half rings and place in a bowl.
Step 6:
Remove the skin from the pink salmon and cut into thin slices.
Step 7:
Salt the onion and rub with your hands.
Step 8:
Place the fish in a bowl with the onion, season with pepper and stir.
Step 9:
Cut the potatoes into thin slices.
Step 10:
Sprinkle parchment with flour, place the dough on it and roll it into an oval.
Step 11:
Cut diagonal strips along the edges of the oval in a herringbone pattern.
Step 12:
Place potato slices in the center and place pink salmon and onions on top.
Step 13:
Place pieces of butter over the filling.
Step 14:
Place the strips of dough crosswise, leaving an edge at the back so that the pie looks like a fish with a head and tail.
Step 15:
Brush the top of the pie with beaten egg and sprinkle with sesame seeds.
Step 16:
Mark the fish's "eye" with peppercorns and open its "mouth."
Step 17:
Cover the pie with cling film and leave to rise for 15 minutes.
Step 18:
Bake for 30-35 minutes at 180 degrees.
Cooking tips
When cutting strips of dough, leave blanks for the head and tail of the fish.
Use a sharp knife to cut the pink salmon skin off, being careful.
Potatoes can be cut with a sharp knife or a grater-shredder.
