This kefir-based pie is a real lifesaver for any occasion when you don't have time to spend over the stove. The dough for this pie is incredibly easy to make; it doesn't require any rolling. This pie is perfect for a quick dinner, picnic, or snack at work, and it's delicious served hot or cold. The dough is porous, perfectly baked, and has a thin, soft, and golden-brown crust.
Step-by-step recipe
Step 1:
Shred the cabbage and place it in a bowl.
Step 2:
Salt and mash the cabbage until soft.
Step 3:
Finely chop the onion.
Step 4:
Peel the potatoes and cut into cubes.
Step 5:
Heat oil in a frying pan and pour vegetables into it.
Step 6:
Sprinkle with turmeric, basil and simmer for 10 minutes until half cooked.
Step 7:
Let's move on to making the dough. Pour the kefir, salt, sugar, and butter into a bowl.
Step 8:
Mix thoroughly and sift the flour into the same bowl. Add the baking soda.
Step 9:
Mix with a whisk until the mixture is uniform and thick like heavy cream.
Step 10:
Pour half of the dough into the pan and spread the filling on top.
Step 11:
Pour the remaining batter over the filling and smooth it out until completely covered.
Step 12:
Bake in the oven at 180 degrees Celsius for 30-40 minutes, until lightly browned. Check for doneness with a wooden skewer.
Cooking tips
Baked goods should be at room temperature. Raw ingredients, such as vegetables and meat, should be sliced as thinly as possible.
The height of the pie should not be large, otherwise the liquid dough with kefir will not bake.
Avoid using a filling with a lot of liquid, otherwise the baked goods will turn out too wet.
At the very end of cooking, you can sprinkle the pie with grated cheese and finely chopped herbs, and leave it in the oven for another 5-7 minutes.
