This dish is a modern take on the classic cottage cheese casserole, familiar to everyone since kindergarten. The addition of peaches adds a light, summery flavor. This cottage cheese casserole can be made with either fresh or canned peaches—the result is always excellent.

Step-by-step recipe
Step 1:
Prepare the curd mixture. Place the curd in a bowl, add the eggs, sour cream, regular sugar, and vanilla sugar.
Step 2:
Gradually add the potato starch, weighing each ingredient on a kitchen scale. This will ensure precision and a fluffy texture in the finished casserole.
Step 3:
Blend the mixture with a blender or mixer until it's smooth and lump-free. This will give you the perfect cottage cheese casserole.
Step 4:
Pour the prepared dough into the pan. Use a baking pan—preferably a silicone one—to easily remove the peach casserole after it cools.
Step 5:
Bake the casserole in the oven at 180°C for about 40–45 minutes, until golden brown. Don't open the oven for the first 30 minutes—this is important for the fluffiness.
Step 6:
Once cooled, turn the pie out onto a plate. Slice the peach thinly and carefully arrange it on top of the cottage cheese casserole.
Step 7:
Sift the powdered sugar through a sieve over the pie and peaches. Done! This peach casserole is a delicate dessert, just like in kindergarten.
Cooking tips
Use only fresh cottage cheese without excess moisture - this is the basis for a fluffy cottage cheese casserole.
If you don't have potato starch, you can replace it with semolina, but the texture will be denser.
To save time, you can use canned peaches - you will get a canned peach casserole that is no less delicious.
Before baking, lightly tap the pan on the table - this will remove air bubbles and make the casserole more even.
Serve the peach casserole chilled for a better flavor.
