Step-by-step recipe
Step 1:
Finely chop the red onion.
Step 2:
Remove the core and seeds from the tomato and chop it finely.
Step 3:
Finely chop the bell pepper as well.
Step 4:
Grate the cheese on a fine grater.
Step 5:
Break the eggs into a bowl and beat with a whisk.
Step 6:
Add vegetables, chopped chili, salt to the eggs and mix.
Step 7:
Melt the butter in a frying pan and add the prepared mixture.
Step 8:
Cook for 2-3 minutes on each side over low heat.
Step 9:
Sprinkle the eggs with grated cheese and the herb mixture, fold in half and cook for another 2-3 minutes over low heat.
Cooking tips
Vegetables should be cut into small pieces of approximately the same size.
Use a mixture of oregano, cumin, rosemary and thyme as a seasoning.
At the last stage, also fry the eggs on both sides.
