Step-by-step recipe
Step 1:
Grate the zucchini on a coarse grater, place in a bowl, add salt, mix and leave for 5 minutes.
Step 2:
Squeeze the juice from the zucchini.
Step 3:
Beat 2 eggs, chopped dill, salt and pepper into the zucchini.
Step 4:
Add rye flour and mix thoroughly.
Step 5:
Heat a frying pan with vegetable oil over medium heat and fry the pancakes on both sides.
Cooking tips
Don't throw away the zucchini juice—it's rich in nutrients and safe to drink. You can use any flour except wheat.
In addition to dill, you can add parsley.
