Vegan Zucchini Fritters

These crispy vegetable pancakes can be made without eggs—flaxseed meal mixed with water makes a great substitute. This is a great breakfast for those who don't eat animal products. These grated zucchini pancakes are low-calorie and delicious.

Step-by-step recipe
Step 1:
Grate the zucchini on a coarse grater.
Step 2:
Place the grated zucchini in a filter bag and leave for 10 minutes.
Step 3:
Place flaxseed meal in a bowl, add water, stir and leave for 5 minutes.
Step 4:
Squeeze the liquid out of the zucchini and place them in a bowl.
Step 5:
Finely chop the dill and add to the zucchini.
Step 6:
Chop the garlic and add to the vegetables.
Step 7:
Add chickpea flour and flaxseed meal to the vegetables, season with salt and pepper. Mix thoroughly to form the pancake mixture.
Step 8:
Method one: grease a baking sheet, use a spatula to place portions of dough on it and bake for 30 minutes in an oven preheated to 180 degrees.
Step 9:
Second method: pour oil into a frying pan, put in portions of dough and fry on both sides.
Step 10:
Serve with your favorite sauce.
Cooking tips
Young zucchini or squash do not need to be peeled before grating.
If you are cooking pancakes in a frying pan, do not fry them too much – they should just become golden brown.
