Step-by-step recipe
Step 1:
Finely chop the parsley.
Step 2:
Grate the zucchini into a bowl using a coarse grater.
Step 3:
Add ricotta cheese and parsley.
Step 4:
Beat the eggs and add salt.
Step 5:
Add oat bran, mix thoroughly and leave for 15 minutes.
Step 6:
Grease a non-stick frying pan with vegetable oil, heat it and drop the pancakes in with a tablespoon.
Step 7:
Fry on low heat under a lid on both sides.
Cooking tips
After adding the bran, it takes time for it to swell a little.
It is very convenient to use the oil in spray form – it is distributed evenly in an even layer.
