Persian omelette with cheese flatbreads
Origin of the recipe
In its native land, this omelette, very popular in Iran and Azerbaijan, is called Kükü sabzi—a dish made from broken eggs. It's usually prepared for Nowruz, the spring festival, and is therefore generously garnished with fresh herbs. Kükü is traditionally baked, but you can also fry it, using tomatoes instead of the herbs. Fresh flatbreads with cheese are a great accompaniment.

Step-by-step recipe
Step 1:
Pour water into a bowl, add a teaspoon of salt, pour in 100 grams of flour and knead the dough by hand.
Step 2:
Cover the dough with cling film and leave for 15 minutes.
Step 3:
Finely chop a small onion and grate 5 small tomatoes.
Step 4:
Place the dough on a floured surface, roll it into a sausage and divide into 6-7 equal parts.
Step 5:
Roll one piece of dough into a thin circle.
Step 6:
Crumble 100 grams of mozzarella cheese into a bowl, place some of the cheese in the center of the flatbread, fold it in half and press down, then roll it lightly with a rolling pin and trim the edge to form an even crescent.
Step 7:
Repeat this with the remaining dough and cheese.
Step 8:
Pour vegetable oil into a frying pan, pour in the onion, add turmeric and black pepper, and stir.
Step 9:
Add grated tomatoes and stir.
Step 10:
Add crushed garlic and stir.
Step 11:
Add a teaspoon of salt and tomato paste, stir.
Step 12:
Add butter.
Step 13:
Beat three eggs, mix and cook until done.
Step 14:
Pour a little oil into a flat frying pan, add the first three flatbreads, and fry, turning them over, until golden brown. Repeat with the remaining flatbreads.
Step 15:
Place the omelette in a deep bowl and serve with warm cheese pancakes.
Cooking tips
To avoid using too much oil on your flatbreads, use a non-stick frying pan.
For an especially delicious meal, eat the omelette by placing it on a flatbread.
