Baked zucchini with rice and nuts

Step-by-step recipe
Step 1:
Trim the ends of the zucchini and cut them into slices at a slight angle.
Step 2:
Place the slices on a parchment-lined baking sheet.
Step 3:
Brush the zucchini with olive oil and bake for 8 minutes at 220 degrees on top or bottom heat.
Step 4:
Pour long-grain rice into a saucepan, cover with water, add salt and cook under a lid.
Step 5:
Peel and finely chop a small red onion, a bunch of parsley and a bunch of dill.
Step 6:
Grind the nut mixture, pour all the chopped ingredients into a bowl, add olive oil, salt, pepper and mix.
Step 7:
Spoon a dollop of the mixture onto each zucchini slice.
Step 8:
Bake for 10 minutes at 220 degrees.
Step 9:
Add tomato puree to the boiled rice in the pan, stir, bring to a boil and remove from heat.
Step 10:
Place a serving of rice on a plate, top with three slices of zucchini and serve.
Cooking tips
Before cooking, rice should be washed well until the water runs clear.
When cooking rice, you should add double the amount of water.
You can puree tomatoes in a blender or use store-bought ones.
